I created a vase from the shell of a pineapple for a shoot and had all the juicy fruit left over. It was mightily tempting to make an alcoholic cocktail to be honest, but since it was pre midday I decided to opt for a detoxifying pineapple and mint infused water instead.
Apparently pineapples improve digestion, cure coughs and colds, help you lose weight, strengthen bones, improve oral and eye health, boost immunity, and fight off infections. That’s quite some fruit!
Mint packs a punch on the health-front too, including nausea relief, improved digestion plus help with headaches, fatigue, memory loss, asthma, weight loss and depression.
The winning flavours are good enough alone to make this drink but judging by the health benefits too, I’m thinking this should be a regular occurrence in our household.
All you need is:
Fresh cubed pineapple (3-4 cubes per drink)
Fresh mint (4-5 bruised leaves per drink, plus 1 sprig for decoration)
Ice (3-4 cubes per drink)
Glass and straw
Cocktail pick optional (you can find the pom pom one shown here)
I simply put the pineapple in the bottom of the glass, added the ice then topped up with water and stirred with a straw.
Either rip the mint leaves or bruise them to release the flavour before adding to the glass and stir again.
Decorate with a pretty straw, cocktail pick and sprig of mint to finish the look.
The combination of pineapple and mint was really delicious and even my two children loved it. Their treat is normally squash so it was really refreshing (pun intended!) to give them this instead.
If you have guests over on a hot day, this would be a great alternative to the usual soft drinks and would work brilliantly in a large jug or drinks dispenser too.
