EASY CHEESE MUFFINS RECIPE
With each brand shoot I do I like to throw in a little DIY takeaway too, so for my Monochrome Father’s Day Afternoon Tea post with Yvonne Ellen I’ve decided to share my Easy Cheese Muffins Recipe. They’re the perfect accompaniment for any DIY Gentleman’s Afternoon Tea!
YOU WILL NEED:
12 holes muffin tin
1 large garlic clove
2 eggs
250ml (1 cup) milk (we use semi-skimmed)
85ml (1/3 cup) sunflower oil (or vegetable)
60g sour cream (1/4 cup)
300g (2 cups) sieved Plain Flour
Big pinch of salt
1 heaped tsp Bi-carb of Soda
1 heaped tsp Baking Powder
200g (2 cups) grated Cheddar cheese
50g Salted Butter
Optional extras that work well: finely chopped spring onion, sundried tomatoes or olives, pancetta, rosemary
TO MAKE:
- Pre-heat the oven to 180 oC (160 for fan ovens)
- Mix the eggs, milk, oil, sour cream and half the crushed garlic into a bowl
- Mix the flour, salt, bi-carb and baking soda into another bowl
- Pour the two bowls in together and mix lightly before folding in the cheese (& optional extras)
- Melt the butter and remaining crushed garlic together then use to grease the muffin tins
- Divide the mixture into the muffin tins (our holes are fairly large so we make 11 not 12)
- Bake for 20-25 minutes or until they’re golden and crusty to touch
- Serve!
