If you’re entertaining and looking for a quick and easy but totally delicious starter or canapé option you simply have to try these apricot, sage and bacon parcels drizzled in sticky maple syrup (or I’ve also used golden syrup and they’re just as good). The saltiness of the bacon in contrast with the sweet apricot and sticky syrup is just divine.

The end result is amazing and importantly (for me at least!), there is minimal preparation and cooking time required.

All you need is:

Dried apricots

Fresh sage leaves

Streaky bacon

Maple or golden syrup

Cocktail sticks (although I think they’d stay together without)

Rocket leaves if you wish

Preheat the oven to 190degrees C

Start by placing your apricot and sage at the top of your streaky bacon

Roll the parcel halfway along the streaky bacon then cut (using the whole slice of bacon meant the middle bit didn’t get crispy and I’m a bit funny about the fat staying soft!). You also then get two parcels from one slice of bacon which has to be a good thing.

Keep together using a cocktail stick (although if the parcels are wrapped tightly I think you could get away without it)

Then either dip the parcel into a bowl of maple or golden syrup, or place the parcels onto a greaseproof paper lined baking tray first then drizzle over the top.

Place in the oven for around 10 minutes or until the bacon is cooked.

Serve, perhaps on a piece of slate or mirror if you’re using as canapés, or on a bed of rocket as a starter or buffet option. I’m a huge fan of the trays and trivets at Oliver Bonas.
